The oaks from the French area Limousin are valued particularly for the maturation of cognac and brandy. Since they contain relative little sharp bitter substances, they do not distort the soft, juicy flavour of ripe fruits at a long maturation of the cognac in the barrel. The high share in flavour forming Quercin and colouring Quercitin in the wood of the Limousin oak awards an aromatic complexity to the cognac and a full, amber yellow colour with caramel glimmer.
