Base are the "Guignes", juicy sweet cherries, great pithy and black, a grafting of the wild cherries from the Alsace and the France-Comté. After a thorough quality control the fruits are picked, stemmed, filled into fermenters made of glass or wooden barrels and mixed thoroughly during 4-5 weeks daily. So the typical of the "Kirsch", the slight almond taste of the cores moves in the flesh. 18 kg of cherries are required for the production of 1 litre of this spirit.
