After the carefully distillation the fine Williams brandy is stored in barrels of French oak. The maturity process in barrique lasts between 10 and 18 months. The storage period depends on the strength of the original distillate as well as on the decision of the experienced burning master.
The evaporation of the liquor at this time is approximately 2% - 4% per annum, the so-called Angel's Share. The oak barrels hold 220 liter. They are used for the storage until 3 to 4 times to be then subjected to a thorough revision (so-called toasting).
After completion of the maturation the distillate is subjected to further refining by natural extracts of Williams pears given as a bonus as a dose for the taste improvement. This so-called dose gives the product its fine sweetness and suppleness. The extract is prepared in special oak-stoods. To this Williams pears are marinated in Williams pear brandy.
