This exquisite rum is produced out of fresh sugar cane juice, a syrup from which the water was withdrawn by a gentle process. This extremely fine distillate gets mature now at least 6 - 23 years in selected barrels that previously aged robust Bourbons, delicate Sherries and fine Pedro Ximénez wines. The result is the inimitable flavour. This maturity process takes place on 2300 m of height in the mountains.
