The essence from Swiss pine (Pinus Cemba) cones
The cones are from the slopes of the mountain Weisshorns (Tramin, South Tyrol). The ideal harvest time is after a passing of three years. The harvest of the fresh and ripe cones is carried out in arduous work done by hand in summer. The Swiss pine cones are then broken open and subjected a three-week maceration in alcohol. The exstract is distilled in a small still. The so received essence presents fresh, resinous and menthol notes.
Production
For the production of gin Z44 juniper berries, yarrowcabbage, shiner root, coriander, gentian root, orange peel, cardamom seed and other alpine and Mediterranean herbs and flowers are used. The botanicals are cold macerated for 12 hours and then distilled gently. A certain share of the essence from Swiss pine (Pinus Cemba) cones is added to the gin distillate which awards the unique note. Reducing on drinking strength and filtration is then carried out.
