Sloe Plum / Schlehe

The sloe plum is a genus of trees related the plum family. The spiny bush, known as the blackthorn bush, grows in the wilds of Europe, Western Asia and Northern Africa. White blossoms appear in spring and grow into a small, round, dark blue to black pitted fruit.
Due to a high level of tannins causing the fruit to be very bitter, sloe plums are typically harvested after the first frost.
At this point, they develop sweet and fine bitter flavors of marzipan, cherry and plum.
Rochelt´s sloe plums grow in the wilds of Eastern Europe. They are harvested by hand once they have ripened to perfection. The fruits are shipped to the distillery, where they mash them instantly. The natural fermentation process of the additive-free mash begins quickly
within a few hours. After careful double distillation, the treasured brandy middle cut then matures for a minimum of five years in open glass balloons.

They use up to 50kg (110 pounds) of sloe plums to produce only one liter of this precious brandy.
