Flavour: Refined and balanced. Staying close to its foundations
of malted barley, the first nose also reveals beautiful aromas
of fruit (green banana, Golden Delicious apple) and acacia honey. Becoming increasingly exotic (pineapple), it then develops a nobly spicy (coriander, ginger, black pepper) and herbaceous (chervil, lovage) register. Little by little, medicinal notes (balm) delicately cover the aromatic palette.
Taste: Taut and lively. Citrus fruits (lemon, grapefruit) initially bring a lot of energy to the first impression in the mouth. This lively start is then followed by a beautiful vanilla and almost roasted (coffee) sequence, the richness of which highlights the incredible balance of sweet and savoury flavours. A particularly mouth-watering bitterness completes the picture.
Finish: Long and rich. Like the first nose, the start of the finish focuses on malted barley. Aniseed (star anise), vegetal (courgette flower) and creamy (coconut milk) flavours gradually spread across the sides of the palate. On the retronasal olfaction, a handful of nuts (hazelnut, almond, cashew) and juicy fruits (pear) bring pleasing length to the
very end of the palate. The empty glass is malty and spicy
(cinnamon, clove).

Yoichi Distillery (est. 1934, island of Hokkaido)
For his first distillery, Masataka Taketsuru, Nikka's founder, seeked similar conditions to Scotland, where he had himself learned everything about whisky making. Yoichi was established in 1934, in the small eponymous coastal town. This extraordinary location benefits from a cold climate with an appropriate humidity, crisp clean air and fresh water. To this day, the distillation process has remained true to traditional methods. The pot stills are heated by a direct coal fire, a practice hardly seen today as it is difficult to control temperature and requires highly skilled craftsmen. However, it is at the source of the whisky's boldness and toasty burnt flavours.
