Sacapalabra's Mezcal Ancestral is made entirely by hand in Santa Catarina Minas, Oaxaca, following a centuries-old tradition. Up to 25 years old, wild-growing agaves are harvested by hand, baked in the ground for days, crushed with wooden mallets and fermented with wild yeasts before being distilled in small clay pots.
