Sacapalabra's Mezcal Ancestral is made entirely by hand in Santa Catarina Minas, Oaxaca, following a centuries-old tradition. Up to 25 years old, wild-growing agaves are harvested by hand, baked in the ground for days, crushed with wooden mallets and fermented with wild yeasts before being distilled in small clay pots.
This mezcal made from 15 to 18-year-old, wild-growing coyote agaves comes from the master mezcalero José Luis Sánchez “Shonga” from Santa Catarina Minas, Oaxaca, Mexico, about 1,500m above sea level, and is one of the very few that is " ancestral". Strict rules apply to this classification regarding the production, which basically has to proceed as it did hundreds of years ago, without any use of modern technology or even modern materials: a.o. earth ovens, stone mortars, wooden barrels, clay pot distillation.
