Drinking temperature: | 12 - 14 °C |
Drink recommendation: | It is advisable to drink this crop as an aperitif with “game” pâtés, salmon, or with a roll of bacon with “dates” or plums. During a meal it goes well with “large game” dishes, poultry or roasts. It is also a good digestive that goes along with bitter chocolate, a board of soft cheeses or roasted almond. |
Wine fermented after partial destemming at controlled temperature, 24/28°C, when the must reaches the desired sweetness, fermentation is then interrupted by adding brandy (77%), ageing in oak wood barrels for a minimum period of seven years, in the warehouses in Vila Nova de Gaia, till bottling.
"Colheitas" are year ports which mature in the barrel as opposed to Vintage ports and be filled only after the seventh year.
