|Characteristics:||The champagne matures, of this 12 months under water on the bottle for at least 60 months. The development is carried out at 60 metres of depth near the island of Ouessant in Brittany. A constant water temperature of 3° degrees Celsius, independent of the season guarantees perfect development and perfect fragrance unfolding. By the ageing under water the champagne matures faster and it disposes about softer and more intensive flavours than bottles stored comparably.|
|Flavour:||Opens super clear, pure and fresh on the nose but also deep and highly complex, with salty oyster and algae flavors and ripe white fruit aromas.|
|Taste:||Very intense and complex on the palate, this is a rich and concentrated Chardonnay with a pure, salty, tightly structured and very complex finish with great tension.|

Unlike many other producers the business can go back exclusively to a grape good of its own. The work already starts here in the vineyard where the traditionally authorized types of vine Chardonnay, Pinot Noir and Pinot Meunier reach a perfect maturity.
