The wine-growing estate Casa Vinicola Botter was founded 1928 of Carlo Botter in Fossalta di Piave, 30 km north-eastern of Venice. With the getting in of the second generation, the sons of the founder Arnaldo, Enzo and Giovanni 1958, the wines were sold filled up in bottles. Today Botter is conducted by different family tribes in third generation. The export ratio amounts to about 90% of the production in over 40 countries.
Wine preparation: A large portion of the cultivated types of vine is allotted to the traditional Primitivo grape. For the Doppio Passo a half of the shoots becomes reaped and traditionally vinified in the second or third decade. The rest matures at the vine another 3-4 weeks. As soon as the fermentation is completed the "ripassare" (another procedure) is carried out with the Primitivo harvested in August. This second fermentation helps the wine to get more intensity, fullness and character.
