All grapes for the Nectar Pedro Ximénez are from the own vineyards of Gonzalez Byass. To concentrate still more sugar in the anyway of course sweet Pedro Ximénez grapes, the berries are dried traditionally in the sun after the harvest for about ten days. The fruit juice extorted gently has an exceptionally high natural sugar content now. The wine is then given into the traditional Solera and Criadera system to complete itself here aromatically during an around ten years' maturity .
