Glenmorangie Allta arose with a quite special yeast which wildly grows on the Cadboll barley of their own not far from the Glenmorangie house.
Glenmorangie is the first Scottish distillery which grows its own yeast for this whisky and has started in the production. Dr. Bill Lumsden collected the wild yeast stem of the corn from the fields of their own, which is used for this rich and fruity whisky. A particularly creamy, aromatic single malt results from the interplay of this yeast with the barley.
Glenmorangie Allta (Scottish Gaelic for "wild" and pronounced "al-ta"), matured in former bourbon barrels including many so-called "second fill barrels" in in which the fruity character particularly takes effect. The tenth Private edition is simultaneous a testimonial for the meaning and the great potential of yeast, which can create innumerable variations of flavours in Scottish whisky.
