Average age of vines: 33 years old
Harvest lasted 9 days for merlots (28/09-15/10) and 3 days for cabernets francs (8/10-15/10). Bunches were sorted first in the vineyard, then carried in plastic crates of 10kg and stored one night in a cold chamber at 7°C. Following the plot by plot management, they were able to choose the tank in relation with the harvested quantity.
Vinification and ageing:
On the next morning, bunches are de-stemmed and berries sorted (optical sorting machine). Then fruits are moved carefully into tanks by natural gravity without being crushed. The alcoholic fermentation takes place in small upside down truncaded cone shape tanks. Specially designed for Château La Gaffeliere, these vats favour extraction with punching down. 75% of the production stays in tanks for the malolactic fermentation, the rest is barreled.
Ageing lasts 14 to 16 months in 50% new french oak barrels.
The cellarmaster racks « à l’esquive » through the small bunghole from barrel to barrel. This ancestral gesture allows to get a clear wine without filtration. Fining with egg whites is the last step before bottling.
