After the carefully distillation the fine Williams brandy is stored in oak barrels. The maturity process in barrique lasts between 10 and 18 months. The storage period depends on the strength of the original distillate as well as on the decision of the experienced burning master.
The evaporation of the liquor at this time is approximately 2% - 4% per annum, the so-called Angel's Share. The oak barrels hold 220 liter. They are used for the storage until 3 to 4 times to be then subjected to a thorough revision (so-called toasting).
