It is important in which altitude on which ground in which microclimate the trees have grown and the size of the pears must not least be correct, so that peel and flesh are in a favourable relationship. Therefore smaller pears are preferred.
The fruits are sorted and fermented by hand. After eight to ten weeks of the fermentation the distillation starts, in which the best is won. During several months the best of the good stored, until the flavours have combined with each other harmoniously.
