The old trees grown at the edges of the forest of the region Zug, have got no care and no "name" and already are not "pure" at all. But the little flesh around the seed of this cherry is full of sweetness and intensity.
Exactly these fully ripe "wild" ones are picked by hand, put and burned by Etter into little baskets. It is carried out an exclusively natural fermentation and storage of the mash in airtight vessels, till that the heart part is distilled out with all her flavours and nose flatterers.
Like the Year-Kirsch these wild cherry distillates are stored on the attic of an old barn over many years in 40 - 50 litre demijohns. Since there are not wild cherries all years, of course the "Wildkirsch" comes only with the exact year name into the bottle. For 70 cl. exquisite cherry, you must distil 9 kg Wild cherries.
