Three kinds of corn are used for the production: Maize, rye and barley, in which the maize amount lies with more than 70% considerably above the legally specified minimum share of 51%. For distilling particularly pure and soft spring water is used from the thick limestone layers by which Kentucky is run through. After the distillation Elijah Craig matures in new barrels of American oak which are carbonized from inside. There is no artificial temperature and atmospheric humidity control.
