All grapes have been harvested in vineyards formerly owned by the Abbey of Clairvaux. Old vines on hill sides facing south. The ancestors took care to choose particularly well exposed and powerfully calcareous parcels (Jurassic Kimmeridgien) of land producing expressive wines.
Already in the 12th century this satellite of the abbey Clairvaux was founded by Saint Bernhard in Urville. The family tree of the family Drappier reaches back up to the 17th century and they live in these building in meanwhile eighth generation certainly today. The vineyard which surrounds these Cistercian monk cellars today is the pride of the family.
Maison Drappier is unique in carrying out the prise de mousse, the remuage and the individual disgorgement of every single bottle of every bottle size. Through this traditional technique the wine is guaranteed an exceptional freshness and an exceptional finesse of foam formation.
