Cuvée from 100% Pinot Noir, 100% first pressing (as always at Drappier), however without dose: So no liqueur is leant on the wine. It remains only the natural unfermented sugar and these are less than 2 g per bottle. Since only a quite small lot of sulphur is used, the wine has the freedom to develop fully.
Already in the 12th century this satellite of the abbey Clairvaux was founded by Saint Bernhard in Urville. The family tree of the family Drappier reaches back up to the 17th century and they live in these building in meanwhile eighth generation certainly today. The vineyard which surrounds these Cistercian monk cellars today is the pride of the family.
Maison Drappier is unique in carrying out the prise de mousse, the remuage and the individual disgorgement of every single bottle of every bottle size. Through this traditional technique the wine is guaranteed an exceptional freshness and an exceptional finesse of foam formation.
