A bellied bottle
Master Johann Baptist Sartorius explained in 1862 what a "Bocksbeutel" is namely "a flattened, round bottle shaped like a pouch or the scrotum of a ram for bottling and sending the Stein wine". In 1726 the "reasonable and highly commendable" Council of the City of Würzburg determined the "Bocksbeutel" to be the mark of quality in contest against the widely disseminated wine-adulterating. At the "Council's behest, the first sealed specimens of the bellied bottles are stored in Bürgerspital's cellars". "And the true, the pure, unadulterated wine, rapidly and brilliantly triumphed", reported the District Archivist Sebastian Göbl. Bürgerspital has been deeply tied to the Bocksbeutel's claim to quality right up to the present day.
