| Characteristics | The Airén grapes are distilled cautiously according to a traditional method in copper stills. According to that the distillates mature in barrels made of American oak which contained before finest Oloroso and Amontillado Sherry. Through the long storage and the Solera and Criadera methods young distillates marry with ripe distillates. Carlos I Amontillado gets an extra finishing in a Solera founded in 1857 in barrels in which the noblest Amontillado sherries from the house of Osborne stored before. |
