For harvest Eiswein, the berries must be frozen like a marble. The picking starts in the middle of the night with at least -10°C. Because the grapes should not thaw, the harvest must be finished before sunrise. The berries are pressed while they are frozen. So all the watery elements remain as ice crystals in the press. Only the pure extract will be used for the Eiswein-production.
