One of the most important rum producers of Central America is a family businesses founded in 1908 and led in third generation until today. The distillery cultivates 1.200 hectare of land in the heart of Panama today and uses sugar cane of the fields of one's own almost exclusively for the rum production. Following the environmentally friendly philosophy of the house, Varela Hermans as the first distillery of Panama, does without burning off the fields before the beginning of the sugar cane harvest.

The fresh sugar cane is further processed after the harvest in an effortful production process within 24 hours. Exclusively molasses is used for the production of this the rum traditionally. Following a 36 up to 48-hour one fermentation the distillation is carried out in different column stills both double as well as fourfold. The maturity process regulated legally lasts for at least 48 months. The storage is not carried out only in approx. 200 l taking ex-bourbon barrels but also in the traditional Solera method at which select distillates walk the individual Solera steps after each other.
