Pinot Noir and Chardonnay are pressed and fermented separated, only the best fruit juice is used. The silver pink colour is already extracted by the enzymatic reaction during the transport of the Pinot Noirs. After the fermentation the wines are blended together, filtered gently and filled into bottles, where they pass through the second fermentation according to a traditional method - so called Méthode Cap Classique - used also for the sparkling wines of the Champagne.
