Chardonnay delivers fruit and elegance, Pinot Noir complexity and fragrance length. Both grapes are vinified separately. They are picked by hand, pressed in the whole and fermented after that. After the fermentation the Cap Classique is blended and bottled and remains for 15 to 18 months on the yeast before it becomes disgorged.
